Float and Sink Lemon Ice

You will need: 6 lemons, 4 cups of water, ¾ cup of sugar, ¼ teaspoon salt, 2 egg whites, 8 grapes, red or green, a grater, a saucepan, an eggbeater, a big bowl, eight 6-ounce paper cups, a grown-up to help you

What you do:

.Grate the rind on one side of one of the lemons.

.Put in water, sugar, salt, and grated lemon rind into the saucepan. Ask your grown-up to heat it until the sugar dissolves, then let it boil for 5 minutes. Then chill it for 30 minutes.

.Cut and squeeze all of the lemons.

.Ask your grown-up to help you separate two eggs.

.Beat the egg whites until they’re stiff and form little peaks.

.In the big bowl, mix the sugar mixture and lemon juice. Add the egg whites and, using the eggbeater, whoosh everything around.

.Pour the mixture into the eight cups.

.Drop one grape into each cup.

.Freeze overnight. Eat!

Ask yourself this question before you eat:

.Did the egg whites rise to the surface or sink to the bottom?

Ask yourself this question after you’ve eaten:

.What happened to the grapes?
